When I was young there was nothing that I enjoyed more than a Hostess Cupcake (well I like Twinkie's too). The other night I was making cupcakes to take to a ward party and I thought that I would try something new. Well today is my friend Diana's birthday and so I thought I would kick it up a notch and pipe in some raspberry cream filling. WOW. Puts Hostess to shame. They are so very yummy...
But taste a 100 times better. Here is the recipe.
I took a chocolate cake mix, added in 4 eggs, 3/4 cup yogurt, 1/2 oil, 11/4 cup milk, 1 box chocolate pudding, 1tsp of almond extract. Baked at 350 for 25 min.
When the cupcakes cooled I piped in the raspberry filling which is 1 can of whipped fluffy frosting and 1/2 cup raspberry jam mixed together until smooth and put into a frosting bag and then using the biggest circle tip I stuck it into the middle of the cupcake and squeezed until the cupcake came up a little bit. Then I took 1/2 a can of chocolate frosting and microwaved it for about 40 second until it is melted and then I dipped each cupcake into the bowl top first. When they dried for about 10 min I took the rest of the raspberry filling and using the smallest circle tip I pipped on the swirl. If you didn't want to use raspberry you can use just the whipped frosting your you could use any other flavoring that you wanted. They were so very yummy.
